Bill,
I think the effect that you are seeing is related to the effect
that takes place in a Kundt's tube apparatus. Liquid filled ones give the
type of structure of "waves jumping out of the water that you describe.
The Exploritorium is San Francisco has such an exhibit. Also, Doug Johnson
has a brass Chinese bowl that shows a similar effect when the bowl is set
to vibrating at it's natural frequency by rubbing the edges.
